What a Sulfur Cube does

When a Sulfur Cube absorbs a block, it becomes immobilized and takes higher knockback instead of damage from most attacks. The block it ate determines which of 12 distinct archetypes it becomes — everything from a bouncy rubber-ball cube to a sliding hockey-puck cube to a live TNT-charge cube. Not every block works: slabs and stairs, for example, can't be absorbed.

Why you probably shouldn't kill it

If you just want the block back, you don't need to kill anything: shear it, or replace the block it's holding, to extract the block safely without splitting the cube or losing the XP trade-off.

Using Sulfur Cubes for minigames

Because the absorbed block determines the cube's bounce and slide physics, players have started building small minigames and obstacle courses around specific archetypes — a TNT-charge cube for a trap course, a rubber-ball cube for a bounce puzzle, and so on. If you're running this on a server with friends, it's worth testing which archetypes your group finds most fun before building something permanent.
